Baked Stuffed Mushrooms

Ingredients

  • 1 lb. fresh mushrooms
  • 2 strips bacon
  • 2 cups fine bread crumbs
  • 1 chopped green onion
  • 1 Tbsp. finely chopped parsley
  • 3 Tbsp. sour cream
  • 2 Tbsp. melted butter
  • salt and pepper to taste

Directions

  1. Rinse mushrooms and remove the stems. Chop the stems finely. Fry the bacon until liquefied.

  2. Pour off fat and add onion and stems. Cook for about 5 minutes and stir in the bread crumbs, sour cream, and other seasonings.

  3. Fill the mushroom caps with a mound of the stuffing, and place in buttered baking pan. Drizzle with the melted butter and put in broiler for about 5 minutes, or until stuffing browns lightly on top.
