Baked Stuffed Turnips

Ingredients

  • 4 medium turnips
  • 4 medium tomatoes
  • 2 Tbsp. uncooked rice
  • 2 cups water
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. butter

Directions

  1. Chop the tomatoes, put pieces into a pot and add the rice, 2 cups water, salt, pepper and butter. Cook until the rice is soft.

  2. Scoop out centers of the turnips, leaving a shell 1/2-inch thick. Chop centers and add in tomato mixture. Fill turnips’ centers with the stuffing. Sprinkle with bread crumbs, and place turnips in greased baking dish.

  3. Add 1/2 cup water. Cover and bake at 350 degrees for 1 hour.
