Ingredients
- 6 medium turnips, peeled
- 1 cup cracker crumbs
- 1/3 cup (1 1/2 oz.) shredded Cheddar cheese
- 1/4 cup milk
- 3 Tbsp. butter, softened
- 2 Tbsp. butter, melted
- White Sauce:
- 1 Tbsp. butter
- 1 Tbsp. all-purpose flour
- 1 cup milk
- 1/4 tsp. salt
- 1/8 tsp white pepper
- paprika
- parsley sprigs (opt.)
Directions

Place turnips in a Dutch oven; cover with water, and bring to a boil. Cover and cook over medium-high heat for 40 minutes or until tender. Drain; let cool.

Remove and reserve centers of turnips, leaving 1/2 inch thick shells. Coarsely chop turnip centers; set aside.

Combine cracker crumbs, cheese, milk and 3 Tbsp. butter; mix well. Fill turnip shells with crumb mixture; place in a greased, shallow baking dish. Brush with melted butter.

Bake, uncovered, at 350 degrees for 20 minutes. Add reserved turnip centers to hot white sauce; pour over sauce over turnips. Sprinkle with paprika an garnish with parsley; if desired. Serve immediately.

Wite Sauce:

melt butter in heavy saucepan over low heat; add flour stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Stir in salt and pepper.
