Baked Sweet Potatoes with Yogurt Sauce

Ingredients
- 4 medium sweet potatoes (12 oz. each), scrubbed and pierces with a fork
- 2/3 cup plain nonfat yogurt
- 2 scallions, minced
- 1/2 tsp. minced garlic
- 1/8 tsp. salt
- 1/2 tsp. freshly grated lemon peel
- 1/3 tsp. ground coriander (optional)
- Pinch of ground red pepper (cayenne), or to taste
- Garnish: minced fresh parsley
Directions

Heat oven to 400 degrees. Bake potatoes until very tender when pierced, about 1 hour.

Meanwhile, stir remaining ingredients in a bowl.

Split potatoes lengthwise, top with some of the yogurt mixture and sprinkle with parsley. Serve remaining sauce at the table.
