Baked Sweet Potatoes with Yogurt Sauce

Ingredients

  • 4 medium sweet potatoes (12 oz. each), scrubbed and pierces with a fork
  • 2/3 cup plain nonfat yogurt
  • 2 scallions, minced
  • 1/2 tsp. minced garlic
  • 1/8 tsp. salt
  • 1/2 tsp. freshly grated lemon peel
  • 1/3 tsp. ground coriander (optional)
  • Pinch of ground red pepper (cayenne), or to taste
  • Garnish: minced fresh parsley

Directions

  1. Heat oven to 400 degrees. Bake potatoes until very tender when pierced, about 1 hour.

  2. Meanwhile, stir remaining ingredients in a bowl.

  3. Split potatoes lengthwise, top with some of the yogurt mixture and sprinkle with parsley. Serve remaining sauce at the table.
