Baked Tangy Tomatoes

Ingredients

  • 4 large tomatoes
  • 2 Tbsp. chopped green pepper
  • 2 Tbsp. chopped celery
  • 1 Tbsp. chopped onion
  • 1 Tbsp. prepared mustard
  • 1/4 tsp. salt
  • 1/3 cup soft breadcrumbs
  • 2 Tbsp. melted butter or margarine

Directions

  1. Cut tomatoes in half crosswise. Scoop out pulp, leaving shells intact. Chop tomato pulp.

  2. Combine tomato pulp, green pepper, celery, onion, mustard, and salt; stir well. Spoon into tomato shells, and place in a 13 × 9 x2-inch baking dish.

  3. Combine bread crumbs and butter; sprinkle over tomatoes. Bake at 350 degrees for 25 to 30 minutes.
