Crispy Sweet Potato Wedges

Ingredients

  • 2 large sweet potatoes, peeled and cut into wedges
  • 2 tbsp. cornstarch
  • 3 tbsp. olive oil
  • 2 tsp Old Bay seasoning
  • 1 tsp dried parsley

Directions

  1. Preheat oven to 450. Spray a rimmed baking sheet with cooking spray, and place in oven to preheat.

  2. In a large bowl, toss together potatoes and cornstarch; shake off excess, and discard any cornstarch in bowl. Drizzle potatoes with oil, Old Bay, and parsley, and toss well to coat. Spread potatoes in a single layer on prepared pan.

  3. Bake for 20 minutes. Increase oven temp to broil, and bake until well browned and crisp, 3-5 minutes more.
