Baked Tilapia with Tomato-Orange Sauce

Ingredients
- 3 cups chopped red tomatoes (about 2 lbs.)
- 2 cusp chopped yellow tomatoes (about 1 /2 lb.)
- 1/4 cup chopped onion
- 1/4 cup dry white wine
- 1 tsp. grated orange zest
- 1/4 cup orange juice
- 2 cloves garlic, peeled, minced
- 1 lb. tilapia filets or other firm white fish, such as orange roughly or grouper
- 1 tsp. olive oil
- 1/4 tsp. salt
- 1/8 tsp. freshly ground black pepper
- 1 Tbsp. chopped fresh basil

Heat oven to 400 degrees

In a medium baking dish, combine red and yellow tomatoes, onion, white wine, orange zest and juice and garlic.

Bake at 400 degrees for 20 minutes. Arrange fish on top of baked tomato mixture, drizzle with olive oil and season with salt and black pepper. Cover with loil and bake 10 minutes over inch (of thickness of filet, measured at its thickest part) or until fish flakes easily with a fork. Sprinkle with fresh basil before serving.
