Baked Trout with Bay leaves

Ingredients

  • 1 clove garlic, crushed
  • 1 1/2 tsp. minced fresh thyme
  • Black pepper
  • 4 (12 oz.) trout, pan-dressed
  • 4 bay leaves
  • 3 Tbsp. butter, melted
  • Juice from 1 lemon
  • 3 Tbsp. fresh parsley, minced

Directions

  1. Preheat oven to 400 degrees.

  2. Combine garlic, thyme and black pepper to taste in a bowl, and spread equal portions on the mixture on one side of each fish.

  3. Arrange fish in an oiled baking dish in a single layer. Pour melted butter over and bake `10 to 12 minutes, basting once or twice with butter. Sprinkle with lemon juice and parsley.

  4. Remove bay leaves and serve.
