Baked Vegetables and Cheese

Ingredients

  • 1 carrot (3/4 cup), thinly sliced
  • 1/2 tomato, diced
  • 1/2 medium zucchini (3/4 cup), thinly sliced
  • 1 1/2 tsp. minced parsley
  • 1/8 tsp. Italian seasoning
  • 1/8 tsp. salt
  • 1 slice low-fat pasteurized process cheese

Directions

  1. Preheat oven to 350 degrees. In an 8-inch pie plate, layer carrot, zucchini and tomato. Sprinkle with parsley, Italian seasoning and salt.

  2. Cover with foil. Bake 30 minutes or until vegetables are crisp-tender, remove foil.

  3. Arrange cheese strips to form a crisscross design on top of vegetables. Return to oven and bake until cheese is slightly melted, about 2 minutes.
