Baked Vegetable Medley

Ingredients
- 1 1/2 cups fresh corn (about 3 ears)
- 3/4 cup peeled, chopped tomato
- 1/2 cup cornmeal
- 2 cups (8 oz.) shredded Cheddar cheese
- 1 medium onion, chopped
- 1 medium-size green pepper, chopped
- 2 eggs, beaten
- 3/4 cup milk
- 1/2 tsp. salt
- dash of pepper
Directions

Combine first 6 ingredients; let stand 30 minutes. Spoon into a lightly greased 12 × 8 × 2-inch baking dish.

Combine remaining ingredients; pour over vegetables. Bake at 325 degrees for 35 to 40 minutes or until set.
