Ingredients
- 4 large eggs
- 1/4 cup water
- 4 oz. cooked ham, cut into thin strips
- 1 cup sliced mushrooms
- 1/2 cup chopped tomato
- 1/4 cup sliced scallions
- 1/4 cup chopped green bell pepper
- 1/8 tsp. freshly ground pepper

Preheat oven to 375 degrees. Lightly spray a 10-inch glass pie pan with non-stick cooking spray.

In medium bowl, with wire whisk, beat eggs with 1/4 cup water until well blended. Stir in remaining ingredients. With rubber spatula, scrape into prepared pie pan.

Bake 20 to 30 minutes until omelet is set, slightly puffed, and browned. Cut into four servings and serve at once.
