Balsamic Beef Kabobs with Couscous and Arugula Salad

Ingredients

  • 1 cup red sweet pepper chunks
  • 1/2 cup onion chunks
  • 2 cups arugula
  • 1 cup radicchio dressed with 1 1/2 Tbsp. reduced-fat balsamic vinaigrette
  • 1/2 cup cooked whole wheat couscous
  • 4 oz. sirloin steak, cubed
  • 2 Tbsp. reduced-fat balsamic vinegar

Directions

  1. Marinate beef in balsamic vinegar while preparing other ingredients.

  2. Thread cubed meat and vegetables onto skewers and grill for 10 to 20 minutes.
