Balsamic Beef Kabobs with Couscous and Arugula Salad

Ingredients
- 1 cup red sweet pepper chunks
- 1/2 cup onion chunks
- 2 cups arugula
- 1 cup radicchio dressed with 1 1/2 Tbsp. reduced-fat balsamic vinaigrette
- 1/2 cup cooked whole wheat couscous
- 4 oz. sirloin steak, cubed
- 2 Tbsp. reduced-fat balsamic vinegar
Directions

Marinate beef in balsamic vinegar while preparing other ingredients.

Thread cubed meat and vegetables onto skewers and grill for 10 to 20 minutes.
