BBQed Pulled Pork

Ingredients

  • 1/2 onion thinly sliced
  • 5 to 6 lbs. pork butt
  • 1 envelope onion soup mix
  • 1 (12 oz.) bottle dark beer
  • 1/2 cup barbecue sauce
  • 1/2 cup ketchup
  • 1 Tbsp. brown sugar
  • 1/2 tsp. ground red pepper (cayenne)
  • Buns for serving
  • Coleslaw for serving, optional

Directions

  1. Put onion slices in bottom of slow cooker and place pork butt on top. In a large bowl, combine onion soup mix, beer, barbecue sauce, ketchup, brown sugar, and ground red pepper and mix well. Pour over pork and cook on low for 7 to 8 hours.

  2. Remove pork from slow cooker (reserving liquid in pot) and let cool for 30 to 40 minutes. Remove bone and loose fat and pull pork with a couple of forks.

  3. Serve on buns drizzled with sauce. Or return pork to pot and stir to coat in sauce ad serve on butts with coleslaw if desired.
