Ingredients
- 1 Tbsp. butter or margarine
- 2 Tbsp. flour
- 1 large can salmon
- 1/4 cup chopped parsley
- juice of 1 lemon
- salt and pepper to taste
- 3 cups cooked rice
- butter cracker crumbs
Directions

Combine butter and flour; blend well in a skillet. Add salmon liquid, lemon juice, black pepper and salt. Combine with flaked salmon.

Put layer of boiled rice in greased casserole; add salmon mixture then remaining rice. Sprinkle buttered cracker crumbs on top. Bake about 30 minutes at 350 degrees until crumbs are lightly browned.
