Ingredients
- 1 lb. uncooked shrimp, shelled and deveined
- 1/4 cup lemon juice
- 1/2 cup olive oil
- grated rind of 1 lemon
- 2 Tbsp. chopped fresh parsley
- 1 Tbsp. honey
- 2 Tbsp. soy sauce
- pinch of cayenne
Directions

Combine shrimp with the remaining ingredients in a baking dish 9 × 13, stirring to make sure the shrimp is coated. Cover and marinate in the refrigerator at least 2 hours.

Preheat oven to 450 degrees. Bake, uncovered, 10 minutes, stirring once. Serve with rice.
