Spinach Dip

Ingredients

  • 1 (10 oz.) pkg. frozen spinach
  • 1 (8 oz.) pkg. cream cheese
  • 1/2 C sour cream
  • 1 (12 oz.) jar marinated artichoke hearts
  • 1 (7 oz.) jar roasted peppers, drained
  • 1/4 C grated Parmesan cheese
  • almonds or water chestnuts

Directions

  1. Thaw spinach; squeeze out extra liquid.

  2. Combine cream cheese, sour cream, and undrained artichoke hearts in food processor. Pulse until blended.

  3. Add drained peppers and Parmesan cheese. Pulse until fairly smooth.

  4. Transfer mixture to a 1 1/2 qt. baking dish. Stir in spinach and almonds (or water chestnuts).

  5. Microwave at HIGH power for 7 minutes until heated through and bubbly around edges.

  6. Stir and serve with crackers.
