Bambi Meatballs

Ingredients

  • Olive oil
  • 1/2 cup unsalted butter
  • 4 oz. bitter sweet chocolate
  • 2 lb. ground venison
  • 1/2 cup port wine
  • 4 juniper berries, finely crushed
  • 1 clove garlic, minced
  • 2 slices fresh white bread, diced
  • 1/4 cup dry bread crumbs
  • 2 eggs

Directions

  1. Heat oven to 450 degrees. Coat a 13 × 9-inch baking dish with olive oil; set aside.

  2. Melt butter and chocolate together in the microwave, or the top of a double boiler.

  3. In a large bowl, combine chocolate-butter mixture, venison, port, juniper berries, garlic, bread, bread crumbs and eggs; mix well using your hands.

  4. Shape mixture into 1 1/2-inch balls. Arrange balls, touching in snug rows, in the prepared baking dish. Roast 20 minutes, or until internal temperature reaches 165 degrees. Cool 5 minutes before serving.
