Ingredients
- 1/2 cup water
- 1/4 cup apple cider vinegar
- 2 tsp. brown sugar
- 1 tsp. whole black peppercorns
- 3/4 tsp. kosher salt
- 1/2 tsp. mustard seed
- 1 star anise
- 1 garlic clove
- 1 cup thinly sliced red onion
- 1 fresh dill front
Directions

Combine water, vinegar, sugar, pepper, salt, mustard seed, star anise and garlic in a small saucepan; bring to a simmer. Pour vinegar mixture over red onion and dill in a clean, heatproof jar. Cool. Cover and chill at least 1 hour or up to 2 weeks.
