Banana Bread

Ingredients

  • 1 cup sugar substitute
  • 1/2 cup (1 stick) butter, softened
  • 2 eggs
  • 1 1/2 cups all purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 cup mashed very ripe bananas
  • 1/2 cup sour cream
  • 2 tsp. pure vanilla extract
  • 1/2 cup chopped walnuts or pecans

Directions

  1. Preheat oven to 350 degrees.

  2. Butter and flour a 9 × 5 inch pan.

  3. Mix butter and sweetener until creamy. Add eggs and beat well. Add the bananas, sour cream and combine butter mixture blend well.

  4. Add the bananas, sour cream and vanilla; stir well. Add nuts and pour into prepared pan.

  5. Bake 1 hour until cake tester comes out clean. Turn onto rack and cool.
