Ingredients
- 1 1/4 cups flour
- 2/3 cup sugar
- 1/4 cup cornstarch
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 cup mashed ripe bananas (mash until smooth and creamy)
- 1/3 cup oil
- 1 egg, slightly beaten
- 1 Tbsp. vinegar
- 1 tsp. vanilla
- Lemon Frosting:
- 1/3 cup butter or margarine, softened
- 1 1/2 cusp confectioners' sugar
- 1 Tbsp. lemon juice
Directions

In 8 or 9 inch square pan with a fork mix well flour, sugar, cornstarch, baking soda. and salt. Add remaining ingredients except frosting. With fork mix until thoroughly blended.

Bake in preheated 350 degree oven 30 to 35 minutes or until pick inserted in center comes out clean and cake pulls away from sides of pan. Cool in pan on rack. Spread with frosting.

Lemon Frosting:

With fork mix-butter and sugar until thoroughly blended. Add lemon juice; beat until smooth ad of spreading consistency.
