Banana Cake with Peanut Butter Frosting

Ingredients
- For the cake:
- 1/2 cup butter
- 1 1/2 cups granulated sugar
- 2 eggs
- 1 tsp. vanilla extract
- 3/4 cup sour cream or buttermilk
- 2 cups all-purpose flour
- 1 tsp. baking soda
- 1 cup mashed ripe bananas
- 1 cup chopped nuts
- For Frosting:
- 2 Tbsp. butter
- 1/4 cup hot water
- 2 cups confectioners' sugar
- 1/4 cup peanut butter
- 1 tsp. vanilla extract

Heat oven to 350 degrees. Grease an 8-inch square pan.

Cream the butter and sugar, add eggs, one at a time; beat in vanilla and sour cream or buttermilk. Combine the flour and baking soda with a whisk and add to the batter. Fold in the bananas and nuts. Pour into prepared pan. Bake 45 to 50 minutes. Cool completely.

In a saucepan, combine the butter and hot water and bring to a boil. Remove from heat and add the sugar, peanut butter and vanilla. Beat until smooth and creamy. Spread immediately on cooled cake.
