Banana Cherry Tarts

Ingredients

  • 1 pkg. (3 3/4 oz.) instant pudding and pie filling
  • 2 cups cold milk
  • 1/2 tsp. rum extract or pure vanilla extract
  • Whipped topping
  • 8 tart shells, your own or purchased
  • 3 medium bananas1 Tbsp. lemon juice
  • 3/4 cups apricot juice
  • 3/4 cup apricot jam
  • 8 maraschino cherries

Directions

  1. prepare instant pudding with 2 cups milk according to package directions.

  2. Stir in desired extract and 1/2 cup whipped topping smoothly.

  3. Spoon filling into tart shells. Refrigerate for 15 minutes.

  4. Slice bananas and arrange on top of tarts. Brush with lemon juice.

  5. Beat apricot jam with fork until fairly smooth. Spoon or brush apricot jam over bananas, coating completely. Refrigerate.

  6. Just before swerving, top tarts with a rosette of whipped topping crowned with a maraschino cherry.
