Ingredients
- 2 tsp. unflavored gelatin
- 3 Tbsp. cold water
- 1 cup mashed bananas
- 1 Tbsp. lemon juice
- 1/2 tsp. grated lemon rind
- 1/8 tsp. grated orange rind
- 5 Tbsp. sugar
- 2 eggs, separated
- 1/8 tsp. salt
- 1 Brazil- Nut Pie Shell

Soften gelatin in water 5 minutes.

Combine banana, lemon juice nd rind, orange rind, cook slowly until consistency of soft custard, stirring constantly.

Remove from heat, add gelatin and stir until dissolved. Cool until slightly thickened.

Beat egg whites until stiff, beat in remaining sugar and fold into banana mixture. Pour into pie shell and chill until form. Spread with whipped cream.
