Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 tsp. salt
- 2 tsp. baking powder
- 1 tsp. baking soda
- 2 to 4 ripe bananas
- 2 large eggs
- 1/2 cup granulates sugar
- 1/2 cup packed brown sugar
- 1 tsp. vanilla extract
- 1/2 cup vegetable oil or melted butter
- 1 to 1 1/2 cups semisweet chocolate chips
Directions
-
Heat oven to 350 degrees. Grease a loaf pan (or 9 × 13-inch pan) and line the bottom with parchment paper.
-
Mix the flour, salt, baking powder and baking soda.
-
In a separate bowl, mash bananas, leaving some texture. You should have 2 cups.
-
Add the eggs, sugars, vanilla and oil or butter to the bananas, and beat until thick.
-
Fold in the flour mixture- gently lift the batter from the bottom of the bowl and fold it over to mix. Still just until blended. Add chocolate chips.
-
Pour the batter into the pan. Bake the loaf pan for 1 hour (the 9 × 13 inch pan will only take 25 to 30 minutes), until the loaf has risen and a knife or skewer inserted in the middle comes out clean. Cool in pan 15 minutes, then run a knife along the edges and pop the bread out onto a plate or cooling rack.
