Banana Bread

Ingredients

  • 1 1/2 cups unsifted all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup Carnation instant nonfat dry milk
  • 2 1/2 tsp. double-acting baking powder
  • 1/2 tsp. salt
  • 3/4 cup Post Grape-Nuts brand cereal
  • 1/2 cup raisins
  • 2 eggs, beaten
  • 1 cup mashed Del Monte Banana (2 medium)
  • 1/3 cup melted butter or margarine
  • 1/4 cup water

Directions

  1. Mix flour with sugar, nonfat dry milk, baking powder and salt in bowl. Stir in cereal and raisins.

  2. Combine eggs, bananas, butter and water. Add flour to mixture and stir just until all flour is moistened. Pour into greased and floured 9 × 5-inch loaf pan.

  3. Bake at 350 degrees for 50 to 55 minutes or until cake tester inserted in center comes out clean. Cool in pan 15 minutes. Remove from pan ad finish cooling on rack.

  4. Wrap in plastic wrap of aluminum foil and store overnight before slicing.
