Favorite Barbecued Chicken

Ingredients

  • 2 broiler/fryer chickens (3-4 lbs. each), cut into 8 pieces each
  • Salt and pepper
  • 2 tbsp. canola oil
  • 2 small onions, finely chopped
  • 2 cups ketchup
  • 1/4 cup lemon juice
  • 2 tbsp. brown sugar
  • 2 tbsp. water
  • 1 tsp ground mustard
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper
  • 1/8 tsp salt
  • 1/8 tsp hot pepper sauce

Directions

  1. Sprinkle chicken pieces with salt and pepper. Grill skin side down, uncovered, on a greased grill rack over medium heat for 20 minutes.

  2. Meanwhile, in a small saucepan, make the barbecue sauce. Heat the oil over medium heat. Add onions; saute until tender. Stir in the remaining sauce ingredients ; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes.

  3. Turn chicken; brush with barbecue sauce. Grill 15-25 minutes longer, brushing frequently with sauce until cooked through.
