swedish pancakes

Serves 12 people

Ingredients

  • 3 eggs
  • 1 1/4 c. milk
  • 3/4 c. sifted all-purpose flour
  • 1 tbsp. splenda or sugar
  • 1/2 tsp. salt

Directions

  1. Beat eggs and milk together well.

  2. Stir flour, splenda and salt together well; add to egg mixture, mixing until smooth.

  3. Drop batter onto moderately hot oiled pan or griddle.

  4. Spread batter evenly to make thin pancakes.

  5. Turn when underside is light brown.

  6. Makes 12 large crepe-like pancakes or lots of little ones. (1 point each for big ones, before the oil is counted)

  7. Serve with sour cream and lingonberry jam, or strawberry jam.
