Caprese Open-Face Sandwiches

Ingredients

  • 4 slices country bread
  • 3 tbsp. olive oil
  • 1 lb. tomatoes (about 2 large), sliced
  • 1/4 cup thinly sliced shallots
  • 1 1/2 cups sliced Soy-Glazed Pork Tenderloin, reheated (see recipe)
  • 6 oz. fresh mozzarella, sliced
  • 1/3 cup torn fresh basil
  • 2 tbsp. balsamic glaze

Directions

  1. Brush bread with 1 tbsp. olive oil; cook on grill over medium until toasted, about 3 minutes per side. Top with tomatoes, shallots, pork, mozzarella and basil; season. Drizzle with balsamic glaze and remaining olive oil.
