Ingredients
- 1 1/4 cups sifted flour
- 1/2 cup sugar
- 1 1/4 tsp. salt
- 2 tsp. baking powder
- 1 egg, beaten
- 1/3 up milk
- 2 tsp. melted shortening
- 4 medium bananas
Directions

Sift 1 cup flour with sugar, salt and baking powder. Mix egg and milk and add to flour mixture gradually, stirring until smooth. Add shortening.

Peel bananas and cut crosswise into batter. Fry in hot deep fat (375 degrees) 4 to 6 minutes. The batter us stiffer than for most fritters and requires longer cooking.
