Ingredients
- 1 zucchini, cut into half moons
- 12 oz. cherry tomatoes, halved
- 1/4 cup olive oil
- 1/4 cup tomato paste
- 3 garlic cloves, finely chopped
- 1/2 tsp crushed red pepper
- 1/2 cup white wine
- 8 oz. spaghetti, cook, plus 1/4 cup cooking water
- Sliced fresh mint
- Grated ricotta salata

In pot, cook first 6 ingredients over medium, stirring often, until softened, about 8 minutes. Add wine; bring to a simmer. Stir in pasta and water; season. Garnish with mint and cheese.
