BLT Tortellini

Serves 6 peopleIngredients
- 2 Tbsp. olive oil
- 4 cloves minced garlic
- 12 ox. halved grape, or cherry tomatoes
- 1 lb. cooked cheese tortellini, save cooking water
- 12 oz. bacon, cooked and crumbled
- 1 Tbsp. bacon grease
- 2 cups chopped romaine lettuce
- 1 cup shredded parmesan cheese
- 1/4 tsp. salt
- 1/4 tsp. pepper
Directions

Heat olive oil on medium-high heat in a large saucepan until hot. Add garlic and stir 1 minute. Add tomatoes and cook another minute, stirring gently. Add cooked tortellini. Stir in bacon and bacon grease.

Add romaine, parmesan cheese and salt and pepper. Toss gently until combined. Add reserved pasta water as needed to moisten. Sprinkle with more salt and pepper, if needed. Serve warm of at room temperature topped with extra parmesan.
