Beef and Peppers

Serves 4 people

Ingredients

  • 2 Tbsp. vegetable oil
  • 1 lb. top round or sirloin steak, cut into thin strips
  • 1 medium onion, finely minced
  • 1 clove garlic, minced
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 can (16 oz.) tomatoes, broken up
  • 2 large green peppers, cut in strips
  • 2 Tbsp. soy sauce

Directions

  1. Pour oil in 3-quart micro-proof casserole or baking dish. Add beef strips and stir to coat with oil.

  2. Add onion, garlic, salt, pepper, and tomatoes. Cover and cook on high (max power) 4 minutes, stirring once during cooking. Add green peppers and soy sauce.

  3. Stir . Cook, covered, on high 4 to 5 minutes, or until green pepper is just tender. Serve with hot cooked rice or chow mein noodles.
