Bananas Hawaiian

Ingredients

  • 4 medium bananas
  • 1/4 cup brown sugar
  • 1/2 cup orange juice
  • 1/2 cup pineapple juice or sherry
  • 2 tsp. lemon juice
  • 1/4 tsp. nutmeg
  • 1/8 tsp. cinnamon
  • 1 cup Kroger flake coconut
  • 2 Tbsp. butter or margarine
  • 2 tsp. rum flavoring, or 2 Tbsp. rum
  • 1 quart vanilla ice cream

Directions

  1. Preheat oven to 450 degrees. Peel bananas and quarter by cutting first lengthwise and then in half. Place in buttered baking dish.

  2. Combine brown sugar with liquid and spices; heat. Pour over bananas. Spread with coconut and dot with butter. Sprinkle with rum flavoring or rum. Shake 15 to 20 minutes or until bananas are tender. Serve over vanilla ice cream.
