Ingredients
- 1/2 cup margarine, softened
- 3/4 cup packed light-brown sugar
- 3/4 cup granulated sugar
- 1 tsp. vanilla extract
- 1 egg
- 1 egg yolk
- 1 cup mashed very ripe banana
- 2 cups all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 3/4 cup buttermilk
- Boiled Frosting:
- 1 cup sugar
- 1/8 tsp. salt
- 1/8 tsp. cream of tartar
- 1 egg white
- 1/2 tsp. vanilla extract

Cream margarine with the sugars until blended. Add vanilla, egg and egg yolk and beat until light. Beat in banana, then add remaining ingredients, except frosting, and beat until smooth.

Pour into greased and lightly floured 9 × 5 × 3 loaf pan and bake in preheated 325 degree oven, 1 hour and 10 minutes, or until done.

Let stand in pan on cake rack 10 minutes, then turn out and turn right side up. Cool and, if desired, spread top and sides of cake with frosting.

Boiled Frosting:

Put 6 Tbsp. water and dry ingredients in saucepan. Bring to a boil, stirring until clear. Then cook without stirring to 240 degrees on candy thermometer, or until a small amount of mixture forms a soft ball when dropped in very cold water.

Beat egg white until soft peaks form. Add syrup in a very thin stream, beating constantly. Then beat until frosting stands in stiff peaks. Add vanilla (Note: On rainy or humid days, cook syrup to a temperature of 242 degrees)
