Ingredients
- sugar
- 6 Tbsp. flour
- 1/4 tsp. salt
- 2 1/2 cups milk
- 3 eggs, separated
- 1 Tbsp. butter or margarine
- 1/2 tsp. vanilla extract
- 2 or 3 fully ripe bananas
- baked 9-inch pie shell
- 1/4 tsp. cream or tartar
Directions

Mix 1/2 cup sugar, the flour and salt in top of double boiler. Add milk and cook, stirring, over boiling water until thickened. Cover and cook stirring occasionally, 10 minutes.

Beat egg yolks slightly. Add a small amount of milk mixture slowly to yolks, put back in double boiler and cook, stirring, 2 minutes. Remove from heat and add butter and vanilla; cool.

Slice bananas into shell and cover at once with cooked mixture. Add cream of tartar to egg whites and beat until foamy.

Gradually add 6 Tbsp. sugar, beating until very stiff. Pile lightly on pie and bake in preheated 400 degree oven 5 minutes or until golden. Cool before cutting.
