Banana Butter

use as a spread for toast, biscuits or English muffins.

Keeps well in refrigerator for several weeks.

Ingredients

  • 4 large bananas
  • 2 Tbsp. juice
  • 1 1/2 cups sugar
  • 1/2 tsp. cinnamon
  • 1/8 tsp. ground cloves

Directions

  1. Peel bananas; cup up chunks and toss with lemon juice until well coated. Mash in blender or mixer until smooth.

  2. Put in saucepan with remaining ingredients. Bring to a boil and then reduce heat; simmer gently for 15 minutes, stirring constantly. Cool.

  3. makes 2 1/2 cups
