Ingredients
- 2 cups all-purpose flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 tsp. vanilla
- 1 1/2 cups very ripe bananas, mashed (best if blackened, dead-ripe, turning to banana liquor)
- 1/4 cup milk
- 1 Tbsp. sugar
- 1/2 tsp. cinnamon

Preheat the oven to 375 degrees. Grease a muffin pan, or if you prefer, line the muffin pan cups with paper liners.

In a small bowl, combine the flour, the baking powder, and the salt.

In a large bowl, cream the butter with the sugar until the mixture is light. Add the eggs and vanilla and beat mixture until it is smooth.

In another bowl, mash the peeled bananas; add the milk and mix well.

Starting with the dry mixture, add about a third to the creamed mixture alternately with the bananas and milk until it is all incorporated together.

Spoon the dough into the muffin pan. Mix together the sugar and cinnamon and sprinkle a little over the top of each muffin.

Bake in a 375 degree oven for 30 minutes, or until muffins are golden brown. Serve warm.
