Ingredients
- Nonstick cooking spray
- 3 ripe bananas, mashed
- 2 eggs, well beaten
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 tsp. salt
- 1 tsp. baking soda
- 12 cup coarsely chopped pecans or black walnuts
- Butter for serving
Directions

Heat oven to 350 degrees. Coat 1 regular-size loaf pan, or 3 miniature loaf pans with nonstick cooking spray.

In a large bowl, mix bananas and eggs together. Stir in flour, sugar, salt and baking soda. Add nuts of choice and blend.

Pour batter into prepared pan (pans) and bake 1 hour for regular-size pan, 45 minutes or less for miniature pans.

Remove from pan to a rack to cool. Serve warm with butter, if desired.
