Banana Nut Cake with Seafoam Frosting

Ingredients

  • 1 2/3 cup shortening
  • 2 eggs
  • 1 1/4 cup mashed ripe bananas, plus 2 sliced bananas
  • 1 tsp. vanilla
  • 2 cups plus 2 Tbsp. flour
  • 1 1/4 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2/3 cup buttermilk (or sour milk)
  • 2/3 cups chopped nuts, plus 1 tsp. for sprinkling on top of cake
  • Seafoam Frosting:
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1/2 cup water
  • 3 egg whites
  • 1/8 tsp. cream of tartar
  • 116 tsp. salt
  • 1 tsp. vanilla

Directions

  1. Cream first 3 ingredients sugar, shortening and eggs, then add vanilla and bananas.

  2. In medium bowl, mix flour, baking powder, soda and salt. Add the dry ingredients. Stir in nuts.

  3. Pour into 2 greased 9-inch cake pans or a 9 × 13-inch cake pan. Bake at 350 degrees for 38 to 48 minutes. let cake cool.

  4. Seafoam frosting:

  5. Mix all ingredients in a saucepan. Cook over medium heat, stirring until sugar is dissolved. Cover and bring to a boil. Remove cover. Cook until just starting to thicken. Syrup will form a soft ball when dropped in cold water. Do not overcook.

  6. Meanwhile, in a large mixing bowl beat egg whites, cream of tartar, salt , until moist stiff peaks are formed. Slowly pour hot syrup in a thin stream over egg whites, beating constantly with electric mixer until frosting holds stiff peaks. Stir in vanilla.

  7. Frost the middle cake layer then add the sliced bananas between the layers. Frost remainder of cake and top with chopped nuts.
