Banana- Nut- Coconut Cake

Ingredients

  • 1 1/2 cups sugar
  • 1/2 cup butter or margarine
  • 2 eggs, slightly beaten
  • 3 mashed bananas
  • 2 cups sifted flour
  • 1 tsp. soda
  • 4 Tbsp. buttermilk
  • 1 tsp. soda
  • 4 Tbsp. buttermilk
  • 1 tsp. vanilla
  • 1 cup broken pecans
  • 1 cup shredded coconut
  • Banana-Nut Coconut Frosting:
  • 1/4 lb. butter or margarine
  • 1 (1 lb.) box powdered sugar (4 cups)
  • 1 mashed banana
  • 1 cup coconut
  • 1 tsp. vanilla

Directions

  1. Cream together the butter and sugar. Add slightly beaten eggs. Stir in bananas, mashed with a fork.

  2. Sift soda and flour together and add alternately with buttermilk. Add vanilla. Fold in pecans and coconut.

  3. Bake at 350 degrees about 50 minutes, in a long cake pan or in two eight or nine-inch pans.

  4. Frost with Banana-Nut-Coconut frosting when cool.

  5. Frosting:

  6. Cream together butter and powdered sugar. Add the mashed bananas, pecans, coconut, and vanilla. Mix well and frost cake.
