Ingredients
- 8 thick slices whole-wheat bread
- 1/2 cup cream cheese, softened (4 oz.)
- 1-2 cucumbers, sliced into about 24 pieces
- 1/2 cup alfalfa sprouts
- 4 tsp olive oil
- 4 tsp red wine vinegar
- 2 tomatoes, sliced
- 4 leaves lettuce
- 1 cup sliced pepperoncini or banana peppers
- 2 avocados, peeled, seeded and mashed
Directions

Spread about 1 tbsp. cream cheese on each bread slice. Arrange cucumbers in a single layer over 4 bread slices, cover with sprouts, and sprinkle with oil and vinegar. Layer on tomatoes, lettuce and pepperoncini. Spread avocado over cream cheese on remaining 4 bread slices. Place spread-side-down on pepperoncini and serve immediately.
