Ingredients
- 8 oz. package cream cheese, softened
- 1 3/4 tbsp. prepared horseradish
- 1 1/2 tbsp. Dijon
- 6 (10-inch) flour tortillas
- 2 cups spinach leaves, stems removed
- 3/4 lb. thinly sliced deli roast beef
- 4 oz. shredded cheddar
Directions

Mix together cream cheese, horseradish, and mustard in a bowl.

Spread a thin layer of cream cheese mixture over each tortilla. Arrange spinach evenly over tortillas. Layer roast beef and cheese evenly over tortillas. Tightly roll up each tortilla and wrap with foil to help roll-ups keep their shape. Refrigerate for about an hour. Slice each roll-up into bite-size pieces to serve.
