Cherry Ginger Crisp

Ingredients

  • 4 cups frozen tart cherries (do not thaw)
  • 1 1/2 cups all-purpose flour, divided use
  • 1 tsp. orange zest
  • 1/2 tsp, dried ginger
  • 4 Tbsp. PLUS 1 tsp. softened butter, divided use
  • 1/3 cup rolled oats

Directions

  1. Heat oven to 350 degrees.

  2. In a large bowl, mix together cherries, 1/2 cup flour, 2 Tbsp. sugar, orange zest and dried ginger. Set aside.

  3. Coat inside of 10-inch oven-safe skillet with the 1 tsp. butter. Pour cherry mixture into skillet and spread into an even layer. Set aside.

  4. In a medium-size bowl, mix together the remaining flour and sugar and the rolled oats with a spoon. Use a pastry blender or two knives to mix the remaining butter into the flour mixture until butter is evenly incorporated and mixture resembles coarse crumbs. Spread topping evenly over cherries. Bake for 35 to 40 minutes or until topping is golden brown and cherries are bubbling. Serve crisp warm or at room temperature.
