Chipotle-Maple Glaze

Ingredients
- 1 can chipotle peppers in adobo sauce
- 1 shallot, minced
- 3 cups pure maple syrup
- 3 cups veal stock
- salt and black pepper, to taste
Directions

ree the chipotles in adobo in food processor, in a sauce pot, combine all ingredients and bring to a boil. Reduce to a simmer. Reduce the sauce by 1/2. Season with salt and black pepper to taste.
