Chipotle-Maple Glaze

Serve on fish, chicken or beef, or whatever suits you.

Ingredients

  • 1 can chipotle peppers in adobo sauce
  • 1 shallot, minced
  • 3 cups pure maple syrup
  • 3 cups veal stock
  • salt and black pepper, to taste

Directions

  1. ree the chipotles in adobo in food processor, in a sauce pot, combine all ingredients and bring to a boil. Reduce to a simmer. Reduce the sauce by 1/2. Season with salt and black pepper to taste.
