Banana Grape Pie (makes 2 Pies)

Ingredients

  • 1 cup milk
  • 1 envelope plus 1 tsp. unflavored gelatin
  • 3/4 cup sugar
  • 1/4 tsp. salt
  • 4 eggs, separated
  • 1 tsp. vanilla extract
  • 2 medium bananas, diced
  • 2 baked 9-inch pie shells
  • 1 1/2 cups Welch's Grape Preserves
  • Whipped Cream

Directions

  1. Pour milk in top of double boiler. Soften gelatin in milk. Add 1/4 cup sugar, salt and egg yolks. Beat lightly to blend. Place over simmering water and cook, stirring constantly, until mixture is thickened. Remove from heat and add vanilla; gradually add remaining sugar, beating until stiff. Fold meringue with diced banana into gelatin mixture.

  2. Spread bottom of each pie shell with 1/2 cup Grape Preserves and pour filling over it. Chill until firm. When ready to serve, garnish with remaining grape preserves and whipped cream.
