Ingredients
- 1 cup mashed ripe bananas (2 or 3 large)
- 1 egg
- 1/2 cup milk
- 3 Tbsp. vegetable oil
- 1 1/2 cups extra raisin Raisin Bran cereal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 1/8 tsp. nutmeg

Preheat oven to 400 degrees. Grease or paper line 12 (2 1/2-inch) muffin cups.

In medium bowl combine bananas, egg, milk, oil and cereal. Let stand 10 minutes, stir to break up cereal.

In large bowl combine flour, sugar, baking powder, baking soda, salt and nutmeg. Add cereal mixture all at once to dry ingredients, stirring just until moistened.

Divide evenly among muffin cups. Bake 20 to 25 minutes or until tester inserted in center comes out clean. Remove from pan.
