Banana- Rhubarb Pie

Ingredients

  • 1/2 to 3/4 cup sugar
  • 2 Tbsp. cornstarch
  • 1/3 cup water
  • 4 cups fresh rhubarb chunks or 1 pkg. (16 oz.) frozen cut unsweetened rhubarb
  • 3 bananas, sliced and gently stirred in 2 Tbsp. lemon juice
  • baked 9-inch pie shell

Directions

  1. In saucepan, mix sugar and cornstarch; gradually stir in water until smooth. Add rhubarb

  2. and cook and stir over medium heat until rhubarb is tender (about 5 minutes).

  3. Layer half the banana slices in pie shell. Add rhubarb, then top with remaining banana slices. Cool.
