Ingredients
- 1/2 to 3/4 cup sugar
- 2 Tbsp. cornstarch
- 1/3 cup water
- 4 cups fresh rhubarb chunks or 1 pkg. (16 oz.) frozen cut unsweetened rhubarb
- 3 bananas, sliced and gently stirred in 2 Tbsp. lemon juice
- baked 9-inch pie shell

In saucepan, mix sugar and cornstarch; gradually stir in water until smooth. Add rhubarb

and cook and stir over medium heat until rhubarb is tender (about 5 minutes).

Layer half the banana slices in pie shell. Add rhubarb, then top with remaining banana slices. Cool.
