Banana-Rice Custard Pudding

Serves 8 people

Ingredients

  • 2 eggs
  • 1/2 cup sugar
  • 1/4 tsp. salt
  • 1 tsp. grated lemon peel
  • 1 1/3 cup milk, scalded
  • 2 cups cooked rice
  • 2/3 cup mashed ripe bananas
  • 1 Tbsp. lemon juice
  • Nutmeg

Directions

  1. Bet well eggs, sugar, salt and lemon peel. Stir in milk and rice. Mix bananas with lemon juice and add to mixture. Spoon evenly among 8 custard cups. Sprinkle with nutmeg.

  2. Set in pan of hot water and bake in preheated 350 degree oven 30 minutes or until knife inserted in center comes out clean. Remove from water.

  3. Serve slightly warm or cold, plain or with cream.
