Ingredients
- 1/2 cup vegetable oil
- 1/4 cup grated yellow onion
- 1/4 cup dark brown sugar
- 2 tbsp. lime zest
- 1/4 cup fresh lime juice
- 4 sprigs fresh thyme
- 2 1/2 tsp. kosher salt
- 1 tsp. ground cumin
- 1/4 tsp crushed red pepper
- 4 bone-in pork chops
- Cilantro-Garlic Sauce (see recipe)
Directions

In a small bowl, whisk together oil, onion, brown sugar, lime zest and juice, thyme, salt, cumin and red pepper. Place chops in a large Ziploc bag; add marinade, and seal bag. Refrigerate for at least 3 hours.

Remove pork from bag, discarding marinade. Let stand at room temp for at least 30 minutes.

Spray grill with cooking spray. Preheat grill to medium-high.

Grill pork chops with grill lid closed until cooked through, about 7 minutes per side. Serve with Cilantro-Garlic sauce.
