Ingredients
- 1 sweet onion, halved and thinly sliced
- Buttermilk
- 1 cup flour
- 1 tbsp. cornmeal
- 1 tbsp. Cajun seasoning
- 1 tsp. kosher salt

Soak onion in buttermilk, 1 hour. Mix flour, cornmeal, Cajun seasoning, and salt. Drain the onion; dredge in the flour. Working in batches, deep-fry in 370 degree vegetable oil until golden, 3-4 minutes. Drain on paper towels. Season with more Cajun seasoning and salt.
